I have type 2 diabetes and find the diet a little boring at times. Anyone have some interesting meal recipes?
Basically, you want to eat better with moderation. I studied the recommended diet for diabetics and I agree it didn’t look fun. I found if I eat healthy and lower carb the world is great. I can recommend Taste of Home web site for interesting meals. Moderation is the key.

Sorry, it really is a boring diet – I’m now type 1 and can eat a lot more with insulin, but before that I used to try lots of different fish recipes with different sauces and dressings. Olive oil dressings are especially good on salads as they’re not only tasty but olive oil is really good for you. Anything with lots of vegetables is good, so maybe a ratatouille or a vegetable moussaka?

My friend who is also Type 2 diabetic gives me this unique recipe for your consideration. She swears that her blood sugar which could run up to 330 when she takes ice cream is now more or less stable because of this recipe. She takes it once or twice a day, aside from her bland diet. This recipe is also bland but effective. Try it.
1 bowl of hot cereal (she uses Quaker oats)
2 crushed garlic (normal size)
2 teaspoonful of Virgin Olive Oil
1/2 teaspoon of honey
Mix thoroughly in the bowl of cereal, until it is okay to eat (not hot!).
Enjoy the strange taste, but soon you will become used to it and your palate will crave for it. Good luck to you.

Why is your diet boring? What are your restrictions? How many carbs do you eat per meal?
I suspect that you are following a more restricted diet than is necessary.
If you are trying to eat very minimal carbohydrates, try reading through the Atkins Diet book for recipes. There are lots of "Atkins friendly" foods all throughout the supermarket, even quick box type lunches and snacks which are near the hot dogs and bacon area in all the supermarkets near me.
It is impossible and not realistic or healthy to avoid all carbohydrates and if you are feeling less that satisfied then you are bound to "cheat" at some point. Allow yourself a cupcake or ice cream or other sugary treat from time to time. Having type 2 diabetes does not mean that you never ever have something sweet again. And also remember it is the carbohydrates not just the sugar that you have to be mindful of.
Ask your doctor for a referral to see a nutritionist to more fully understand the relationship between food and diabetes.

well i do eat something good meal like alfredo fettucinni but cut off those heavy cream alternate it with immitations

I like this for something different just use sugar substitute if you like. I don’t use pie crust because of the carbs.
Summer Squash Custard
1 cup sliced,cooked and drained
summer squash
2 large eggs
2/3 cup sugar
1 1/2 cups milk
1/8 tsp. cinnamon
2 tbsp. corn starch
1/2 tsp. salt
1/2 tsp. vanilla
Mix all ingredients in blender. Pour into pie shell or casserole dish.
Sprinkle top with nutmeg.
Bake at 450 for 10 minutes
then 325 for 40 minutes
Knife in center should come clean.

Both my husband and myself are type 2 diabetics and we still eat a huge variety of food. I find the best thing to do is start from scratch I now use very little prepared processed foods. If we want spaghetti bolognaise I dry fry the mince then drain of all the fat I can I then fry onion,carrot and mushroom (or any mixture of vegetables you like) in a small amount of olive oil add the mince and a jar of ragu/dolmio sauce and cook wholemeal pasta in a separate pan. to make curry you can use a mix of dried spices or cheat and use patiks curry paste and a tin of tomatoes. Tricks I use are to use sugar substitute or dried fruit instead of sugar. use wholemeal pasta rice bread when possible. look for things with no added sugar, we enjoy a wide mix of dishes some just healthier versions of what we ate before. Use herbs and spices to vary the flavour of food. Some things we enjoy are curries, bolognaise, home made kebabs- tortillas served with sliced fresh vegatables and seasoned chicken chunks, macaronni cheese. The thing to do is try different menus and then check you glucose level a few hours after ewating and if they go to high then either adapt the receipe or eat smaller portions
